Mumbai's AMADEO By Oberoi Is Coming To The Capital With A Special Pop-Up, The Counter Collection

2025 marks 60 glorious years of one of Delhi’s most sought-after hospitality landmarks, The Oberoi New Delhi. For decades, the hotel has stood as a symbol of refined luxury, impeccable service, and a philosophy that always puts its guests first. Whether it’s a stay or a meal, every visit to The Oberoi New Delhi leaves guests with a memory they carry long after. To celebrate this remarkable milestone, the hotel has planned a host of special experiences. Among them is one of the most anticipated — a three-day culinary pop-up at Threesixty, featuring Mumbai’s celebrated Amadeo by Oberoi.

When Amadeo first opened its doors at the Nita Mukesh Ambani Cultural Centre in Mumbai, it redefined what dining within the Oberoi Group could be. Unlike the brand’s traditional fine-dining spaces, Amadeo was conceived as an independent restaurant, modern, inventive, and full of discovery. The very name “Amadeo,” derived from the Latin word Amadeus, meaning “love of God,” set the tone for something timeless yet forward-looking. Its compass-inspired logo, with the “O” tilted like the Earth on its axis, symbolises a world in motion — constant evolution, curiosity, and journeys waiting to be explored. And true to its identity, Amadeo has quickly become award-winning, drawing diners from across the country who seek more than just a meal— they come for an immersive and interactive experience.

Now, for the first time, Delhi gets a taste of this culinary star with The Counter Collection — an interactive dining experience helmed by Chef Kayzad Sadri. Built around four global cuisines — Japanese, Chinese, European, and Indian — the concept invites guests to move between counters, creating a more engaging, theatrical style of dining. "At Amadeo by Oberoi, our menu philosophy is built around The Counter Collection - four culinary pillars of Japanese, Chinese, European and Indian, each presented through interactive counters that transform dining into an immersive experience," Chef Kayazad Sadri told The Style List.
The pop-up menu brings some of Amadeo’s signature highlights to Delhi. For a fresh, light start, the Good for You Green Salad balances creamy avocado with crisp green apple, edamame, and orange segments in a zingy lemon vinaigrette. The Beetroot Involtini adds layers of flavour, with silky cashew cream, smoked carrot purée, and crunchy hazelnuts creating richness and bite. From the Japanese collection, the Hamachi Usuzukuri — thin slices of yellowtail paired with avocado tartare, sambai sauce, and wasabi dressing — delivers refined subtlety. For seafood lovers, the Chilean Sea Bass roasted with five-spice butter and lemon is delicate yet indulgent.
The menu also nods to Indian street-food nostalgia with Amadeo’s playful Avocado Chaat, where spicy curd and tangy tomato chutney meet the creaminess of avocado in a refreshing twist. Speaking about the Indian dishes the chef shared, "For the Indian Collection at Amadeo by Oberoi, familiar favourites are given a refreshing touch. The Avocado Chaat combines a global favourite with the vibrancy of a local classic, while the Truffle Tadka Dahi Kebab takes a beloved Indian dish and adds a distinctive twist. The idea is to play with what is trending globally while staying rooted in flavours that resonate locally."Desserts too are as much about drama as flavour — the Chocolate Geode offers a theatrical indulgence with chocolate sponge and mousse layered against a sharp berry sorbet, while the Mango and Coconut Tres Leches pairs tropical mango with coconut cream and sorbet, leaving guests with a lighter, refreshing finish.
With his front-row access to luxury culinary experiences, we asked Chef Kayzad Sadri for his perspective on the direction of fine dining in India. His response perfectly captured the shift in focus toward experiences. "Luxury dining in India is becoming less about formality and more about experiences that connect. Guests are looking for food with a story, flavours that feel authentic yet exciting and a sense of discovery in every meal. It’s about craft and culture coming together, creating moments that linger long after the meal is over." He further emphasised the value of interactive counters that blur the line between the kitchen and the table. "These allow guests to see the craft up close, engage with chefs and discover the story behind each dish. Dining becomes more personal, more immersive and not just about eating, but about connecting with the flavours, the people and the process that bring it all together."
