1. Banana & Oats Pancakes

  • 3 tsp ground oats

  • 1 large ripe banana

  • 1 and 1/2 tsp milk

  • 1/2 tsp cinnamon powder

  • A few drops of vanilla essence

Mash the bananas until smooth. Add the milk, grounds oats and cinnamon powder. Mix well to ensure the consistency is thick (don't add too much milk to make the mixture runny). Finally, add the vanilla essence and give it a quick mix. In a pan add butter and let it melt. Pour half the batter into the pan and spread evenly, let the batter brown and then flip over. Serve hot and pour on some honey or a dash of heated maple syrup.

* This batter is enough for just 1 person - 2 small pancakes.

2. Cucumber & Hung curd Spread

  • 1 cucumber finely chopped

  • 1/2 tsp mustard

  • salt & pepper to taste

Add the cucumber (and onion if you like) to the hung curd. Then add the mustard and pepper. Lastly, add the salt and mix well. Use as a spread on your toast. Serve the dip chilled. Sprinkle on some chia seeds for a healthy touch.
